Suggestions for Linux distro please?

I'm considering trying out a Linux distro on my machine, and was after some suggestions from Linux people as to which distro to go for. Important things are that it must be easy to use and keep up to date, it must support my hardware, and it would be an added bonus if I didn't have to switch back to Windows too often, LOL!

I'd also like to run a web server with PHP and MySQL on it for testing functionality for a web site I'm working on on and off, but I'm sure pretty much any linux distro comes with those already... :)

Oh, and of course, I'd want to run UAE on it, as much as I'd rather be using the real hardware that is in storage at the moment, it's in need of replacement parts before it will boot, so for now I have to stick with using emulation.

Hardware is this:
  • AMD Athlon 64 3500+ (socket 939)
  • Gigabyte GA-K8N-SLI Motherboard
  • 1Gb DDR400 RAM
  • nVidia 7600GS with 256Mb RAM PCIx video
  • 200Gb Seagate ATA hard disk
  • LG DVD-R/W
  • Viewsonic E640 15" CRT
  • Standard PS/2 keyboard and mouse

I played around with a few Linux distros a few years ago on an older machine, but never found anything that I liked.
