another question is can a gs use an aftermarket drive (Apple ][) that uses a ribbon cable and associated connector (back of disk unit has a head type connector)?

For your second question, the answer is Yes. You will have to install the controller card in slot 6 and change the setup for this slot to "Your card" in the control panel.

There are adapters out there to convert the DB19 to an IDC20 that should allow the IIGS to work with an older drive...at least I'm assuming from what I've read in the past that it will work. I seem to recall seeing such things on ebay in the past, but not sure if my searching isn't good today, or if they just aren't out there...found a few elsewhere though - this is the sort of thing you are looking for:
